Why You'll Love This Recipe
One pot. Brown, simmer, add the couscous, done.
Creamy without being heavy. Milk and a quick flour roux give it body without a drop of heavy cream.
Little pearls, big comfort. The couscous gets chewy and plump in the broth.
Feeds six. Ladle it into bowls and call it dinner.

Ingredient Notes
Italian Chicken Sausage: It is leaner than pork sausage, but it still brings that fennel-and-herb flavor that seasons the whole pot. The browned bits it leaves on the bottom of the pan are what the wine lifts up later, so do not wipe them out. I do the same thing in my Creamy Mascarpone Sausage Pasta.
Butter and Flour: Butter and flour cooked with the vegetables are what make this soup creamy. The flour thickens the broth, so the milk turns it silky instead of thin.
Pearl Couscous: The larger pearls stay plump and a little chewy instead of dissolving into mush the way regular couscous would. They also soak up the creamy broth as they cook. If you like pearl couscous, my Pearl Couscous Tabbouleh is a fresher way to use it.
Dry White Wine: A quarter cup deglazes the pot and adds a bright acidity that cuts through the cream and sausage. Use something you would drink. No wine? See the swap below.
Whole Milk and Chicken Bone Broth: The milk keeps the soup creamy and the broth keeps it savory. Together, they give you a soup that is rich but not heavy.
Italian Seasoning and Red Pepper Flakes: Italian seasoning gives the soup its herby backbone, and the red pepper flakes add a gentle warmth. Use less if anyone at your table is spice-sensitive. My Mediterranean herbs and spices guide covers more ways to use them.
Baby Kale or Spinach: Two cups stirred in at the very end add color, a little freshness, and some greens. Spinach wilts almost instantly. Baby kale holds a bit more texture.
Pro tip
The Secret to Perfect Soup
Serve soon after it finishes. The couscous keeps absorbing broth as it sits, so the soup gets thicker the longer it waits.

Substitutions & Variations
No white wine? Add an extra ¼ cup of chicken broth and 1 tablespoon of lemon juice. You get the acidity without the wine.
No chicken sausage? Pork or turkey Italian sausage works, so just remove the casings first.
No kale or spinach? Swiss chard also works. Just do it a minute earlier since it takes longer to soften.
Want it spicier? Add a few extra red pepper flakes or a spoonful of Calabrian chili paste with the garlic.
No Parmigiano Reggiano rind? Skip it and add a little extra freshly grated Parmigiano Reggiano at the end.

FAQ
Pearl couscous keeps soaking up broth as it sits. Stir in a splash of chicken broth when you reheat it and it loosens right back up.
It melts slowly into the broth and adds a savory, nutty depth. It is optional, but worth saving rinds for.
It has a gentle warmth from ½ teaspoon of red pepper flakes. Use less if you are sensitive to spice, or add more if you like heat.
