Blend your vegetables. That is the whole secret behind this Roasted Pumpkin and Tomato Pasta, and also the reason your kids are about to eat pumpkin, carrot, red pepper, and onion without knowing it and love it. Sugar pumpkin, vine tomatoes, red pepper, carrot, onion, and a whole head of roasted garlic go into the oven until soft and slightly charred, then straight into the blender with heavy cream until they become the silkiest, most deeply flavored pasta sauce you have ever made from scratch.

As a mom and stepmom of four, I have learned that the fastest way to get vegetables into kids is to make them completely invisible inside something delicious. Roasting the vegetables first is what makes this work. The heat concentrates their sweetness, takes the edge off everything that kids find objectionable about vegetables, and the blender finishes the job. What comes out of that blender looks and tastes like a rich tomato cream sauce!

Why You'll Love This Recipe
The sauce is secretly full of vegetables. Pumpkin, carrot, red pepper, onion, tomatoes, and a whole head of garlic. Your kids will not know. Your kids will ask for seconds.
One sheet pan, one blender, one pot of pasta. That is the whole operation.
Roasted garlic makes the sauce. Sweet, jammy, and nutty after 45 minutes in the oven. It goes in whole and disappears into the sauce.
Fall produce at its best. Sugar pumpkin and vine tomatoes roasted together smell incredible and taste even better. This is the pasta for October.

Ingredient Notes
Sugar Pumpkin: Sugar pumpkin has a sweeter, denser, less watery flesh than carving pumpkins, and it roasts beautifully into something soft and slightly caramelized that adds body and a subtle sweetness to the blended sauce.
Vine-Ripe Tomatoes: Vine-ripe tomatoes have more flavor and less water than regular supermarket tomatoes and they roast beautifully into something concentrated and slightly jammy at the edges. That slight char on the tomatoes when they come out of the oven is flavor and perfection!
A Whole Head of Roasted Garlic: The ingredient that makes people stop mid-bite and ask what is in this sauce. By the time it comes out, the individual cloves are soft, sweet, and slightly nutty and they squeeze directly into the blender with the rest of the vegetables.
Carrots: Carrots add a natural sweetness to the sauce that kids will never identify and adults will appreciate. They also add color and body to the blended sauce. Cut them small, roast them properly, and they will be completely undetectable in the finished pasta.
Heavy Cream: Half-and-half works as a lighter substitute. The sauce will be slightly less rich but still very good. Add the cream to the blender with the warm vegetables, and it will incorporate immediately into a smooth, glossy sauce.
Parmigiano Reggiano: Parmigiano Reggiano adds a deep, nutty, savory finish that amplifies everything the roasted vegetables are already doing. Season with salt only after the Parmigiano goes in because it adds significant salt on its own.
Pro tip
The Secret to Smooth Sauce
Run the sauce through a mesh strainer if you want it extra smooth. Not necessary but if you are serving this to particularly suspicious children, this extra step removes any remaining texture and produces a sauce that looks and feels exactly like a classic tomato cream. No evidence of vegetables whatsoever.
Substitutions & Variations
No sugar pumpkin? Butternut squash works beautifully in the same quantity and roasts in the same time. Kabocha squash is another great option with a slightly nuttier flavor.
No burrata? Fresh mozzarella torn over the top is the closest substitute. A drizzle of good ricotta works too and adds a similar cool creaminess. Both are good. Burrata is still better.
Want it dairy free? Full fat coconut cream instead of heavy cream and nutritional yeast instead of Parmigiano Reggiano. The sauce will taste different but still deeply flavored from the roasted vegetables. Skip the burrata or use a dairy free alternative.
Want it spicier? Double the red pepper flakes or add a tablespoon of Calabrian chili paste to the blender with the vegetables. The heat works beautifully against the sweetness of the pumpkin and tomatoes.
Want to add protein? Italian sausage cooked and crumbled, tossed through the finished pasta, is a very natural addition and very much at home with this sauce. Crispy pancetta scattered over the top alongside the burrata is also a beautiful move.

FAQ
Yes! Any short pasta with ridges or a hollow center that can trap the sauce works beautifully. Penne, ziti, rigatoni, or tortiglioni are all great. Avoid long, thin pasta like spaghetti, as the blended sauce will slide off.
Add more pasta water a little at a time and stir. The sauce will loosen immediately.
Yes! The blended roasted vegetable sauce keeps in the refrigerator for up to 4 days or in the freezer for up to 3 months. Reheat gently in a pan over medium low heat adding a splash of water or cream to loosen it back up. Cook the pasta fresh when you are ready to serve.

- Roast at 375F for 40 to 50 minutes until the vegetables are completely soft, slightly charred at the edges, and the garlic cloves are golden and tender when pressed. Let cool for 5 to 10 minutes before blending.

Cook the pasta

Add the pasta and pasta water a quarter cup at a time, stirring between additions, until the sauce is loose and silky enough to coat the pasta. Taste and adjust salt and red pepper flakes as needed. Remember the Parmigiano adds salt so taste before reaching for the salt shaker.¾ cup Parmigiano Reggiano, ½ cup pasta water
