This Eggnog French Toast Breakfast Casserole is the best breakfast casserole for holiday mornings. With its rich custard mixture made from creamy eggnog, brown sugar, and warm spices, this dish will have your whole family gathering around the table. Topped with a buttery crisp topping and served with a drizzle of Bourbon maple syrup, it’s a great option for celebrating special occasions like Christmas morning or just treating yourself to an indulgent sweet breakfast. I made this the very next morning after a few plates of Tini's mac & cheese. so I guess you can call that indulgence overload?

Ingredients for Eggnog French Toast Breakfast Casserole

For the Casserole:

  • 12 slices of brioche bread, cut into 1-inch cubes

Eggnog Custard:

  • 1.5 cups eggnog
  • ½ cup whole milk (or almond milk for a lighter option)
  • 1 teaspoon bourbon vanilla extract
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • 4 large eggs

Cinnamon Sugar:

  • ½ cup brown sugar
  • 1 tablespoon cinnamon

Crumble Topping:

  • ½ cup flour
  • ½ of the cinnamon sugar mixture
  • ⅓ cup cold butter, cubed

Bourbon Maple Syrup:

  • 1 tablespoon unsalted butter
  • 1 cup maple syrup
  • 1 tablespoon bourbon

Prepare the Custard Mixture

  1. In a medium pan, whisk together the eggnog, whole milk, bourbon vanilla extract, teaspoon cinnamon, nutmeg, and butter on medium heat. Simmer for 5 minutes.
  2. Set the milk mixture aside to cool while you prepare the bread.

Chop the Bread

  1. Use day-old bread for best results. Cut the brioche bread into 1-inch cubes and layer half of them into a parchment-lined baking dish.

Add the Eggs to the Custard

  1. Whisk the large eggs into the cooled custard mixture, ensuring it’s well combined.

Assemble the Casserole

  1. Sprinkle half of the cinnamon sugar mixture over the first layer of bread.
  2. Add the remaining bread cubes and gently press them down.
  3. Pour the custard mixture evenly over the bread, ensuring every piece is soaked. At this point, let it sit on the counter for 30 minutes or overnight in the fridge.

Make the Crumble Topping

  1. In a medium bowl, combine the flour, remaining cinnamon sugar, and cold butter. Blend in a blender until nice and crumbly.
