Ingredients for Fudgy Brown Butter Brownies

Wet Ingredients:

  • 1 cup unsalted butter, browned
  • 1 cup Dutch cocoa powder (or unsweetened cocoa powder)
  • 1 teaspoon instant coffee
  • 5 oz dark chocolate, chopped
  • 1 cup semi-sweet chocolate chips, for folding into the batter
  • 1.5 cups white sugar
  • ½ cup brown sugar
  • 1 tablespoon vanilla extract
  • 4 large eggs, at room temperature

Dry Ingredients:

  • 1 teaspoon salt
  • ¾ cup purpose flour

Instructions

Brown the Butter

  1. In a medium saucepan, melt the unsalted butter over medium heat. Stir frequently until the butter turns a golden amber color and you see small brown flecks (this is the milk solids caramelizing).
  2. Once browned, remove the pan from heat and stir in the cocoa powder and coffee powder and 5 oz of chopped chocolate. Mix until smooth, and let the butter mixture cool slightly.

Prepare the Sugar Mixture

  1. In a large mixing bowl or the bowl of a stand mixer, combine the white sugar, brown sugar, and eggs.
  2. Using a hand mixer or a whisk attachment, beat the sugar mixture until thick and frothy about 4 minutes.

Combine Wet Ingredients

  1. Slowly add the cooled butter mixture, melted chocolate, and vanilla extract to the sugar mixture. Mix until fully incorporated.

Add the Dry Ingredients

  1. Sift the all purpose flour and salt into a medium bowl.
  2. Gently fold the dry ingredients into the wet mixture using a rubber spatula. Be careful not to overmix to avoid streaks of flour.

Add Semi-Sweet Chocolate Chips

  1. Fold in the semi-sweet chocolate chips for extra pockets of melted chocolate throughout the brownies.

Bake the Brownies

  1. Preheat your oven to 350°F and position the rack in the center.
  2. Line a light-colored pan or glass pan with parchment paper and pour in the brownie batter. Smooth the top with a spatula.
  3. Bake for 30-35 minutes, or until a toothpick test comes out with moist crumbs (not wet batter).

Cool and Slice

Once cool, lift them out using the parchment paper and slice into squares.
