Wet Ingredients

  • 1 cup unsalted butter browned
  • 1 cup Dutch cocoa powder or unsweetened cocoa powder
  • 1 tsp instant coffee
  • 5 oz dark chocolate chopped
  • 1 cup semi-sweet chocolate chips for folding into the batter
  • 1.5 cups white sugar
  • ½ cup brown sugar
  • 1 tbsp vanilla extract
  • 4 large eggs at room temperature

Dry Ingredients

  • 1 tsp salt
  • ¾ cup purpose flour

Instructions
 

Brown the Butter

  • In a medium saucepan, melt the unsalted butter over medium heat. Stir frequently until the butter turns a golden amber color and you see small brown flecks (this is the milk solids caramelizing).

  • Once browned, remove the pan from heat and stir in the cocoa powder and coffee powder and 5 oz of chopped chocolate. Mix until smooth, and let the butter mixture cool slightly.

Prepare the Sugar Mixture

  • In a large mixing bowl or the bowl of a stand mixer, combine the white sugar, brown sugar, and eggs.

  • Using a hand mixer or a whisk attachment, beat the sugar mixture until thick and frothy about 4 minutes.

Combine Wet Ingredients

  • Slowly add the cooled butter mixture, melted chocolate, and vanilla extract to the sugar mixture. Mix until fully incorporated.

Add the Dry Ingredients

  • Sift the all purpose flour and salt into a medium bowl.

Bake the Brownies

  • Preheat your oven to 350°F and position the rack in the center.
