Ingredients
 
 

  • 2 cups jasmine rice cooked
  • 1 lb shrimp cleaned and deveined
  • 2 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ¼ teaspoon salt
  • ¼ teaspoon pepper

Cucumber salad

  • 2 cups Persian cucumbers, sliced
  • 1 tablespoon rice vinegar
  • 1 tablespoon soy sauce
  • ½ teaspoon garlic powder
  • 1 tsp sesame oil
  • 1 teaspoon sesame seeds for garnish

Toppings

  • 1.5 cup edamame
  • 1.5 cups shredded carrots

Sauce

  • 1.5 tablespoon sweet chilli sauce
  • ½ cup mayo
  • 1 teaspoon soy sauce
  • ½ teaspoon garlic powder
  • 1 teaspoon lime juice
  • 1 tablespoon sriracha

Instructions
 

Make Rice

  • Cook the Rice: Rinse the jasmine rice under cold water until the water runs clear. In a rice cooker or medium pot, combine the rice with 1.5 cups of water. Cook according to the rice cooker instructions or bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes until the rice is tender.

  • Fluff the Rice: Once cooked, fluff the rice with a fork. Set aside and keep warm.

Cucumber Salad

  • In a large bowl, combine the thinly sliced Persian cucumbers, rice vinegar, soy sauce, garlic powder, and sesame oil. Toss to coat evenly. Garnish with sesame seeds.

Cook the Shrimp

  • Season the Shrimp: In a large bowl, toss the shrimp with garlic powder, onion powder, salt, sesame oil, and pepper until evenly coated.

  • Heat a large skillet over medium heat. Add avocado oil. Once hot, add the shrimp in batches to not overcrowd the pan. Cook for about 1 minute on each side until they barely turn pink and opaque. Remove from heat and set aside. Once all the shrimp are done, add back to the pan and add in 2 tablespoon of soy sauce and deglaze the pan. Sauté for 30 seconds and remove from heat.

Combine Sauce

  • Mix the Sauce: In a small bowl, combine the sweet chili sauce, mayo, soy sauce, garlic powder, lime, and sriracha. Stir until well blended. Adjust the seasoning to taste if needed.

  • Divide the Rice: Evenly distribute the cooked jasmine rice among four bowls.
