Chicken

  • 3 chicken breasts halved
  • ½ cup all purpose flour
  • ¼ cup finely grated fresh Parmesan cheese
  • 1 teaspoon salt
  • ¼ teaspoon fresh black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon Italian seasoning

Sauce

  • ¼ cup olive oil
  • 2 tablespoon butter
  • ½ medium onion chopped
  • 8-10 garlic cloves
  • 1 cup low sodium chicken broth
  • 1 cup heavy cream
  • 1 cup finely grated fresh Parmesan cheese
  • ½ teaspoon garlic powder
  • ½ teaspoon Italian seasoning

Instructions

Chicken

  • Cut your chicken cutlets in half.

  • Combine your flour, seasonings, and ¼ cup of your grated parmesan.

  • Bread your chicken cutlets and set aside.

  • Melt your butter and olive oil on medium high heat. Add in your chicken and cook for 4 minutes.

  • Flip and cook for an additional 4 minutes. Remove and set aside.

Sauce

  • Turn your heat to medium and add in your chopped onions. Cook for 3 minutes or until translucent. Make sure to scrape all those delicious brown bits from the pan.

  • Lightly crush your garlic cloves by hitting it with the back of your knife. Add to your pan and sauté for 1 minute or until fragrant.

  • Add in your chicken broth to deglaze the pan. Add in your heavy cream, seasonings, and parmesan cheese. Let that simmer on medium for 3 minutes.

  • Add in your chicken and simmer on low medium for 4 minutes to let the sauce thicken and the chicken finish cooking. The internal temperature should be 165F.
