Cook the Veggies
- Heat a skillet over medium heat and melt 1 tablespoon of butter.
- Add the sliced onions and cook for 2 minutes until softened.
- Add the peppers and 1 tsp of the seasoning mix (chili powder, cumin, onion powder, garlic powder, smoked paprika, and salt).

Heat the Tortillas

Fill each tortilla with the beef, peppers, and onions.
Tips for the Best Beef Fajitas
Don’t Overcrowd the Pan: Cook the beef in a single layer for a nice sear and better flavor.
Adjust the Veggie Texture: If you prefer softer veggies, cover them with aluminum foil and let them steam for a few extra minutes after cooking.
Use Fresh Lime: Freshly squeezed lime juice brightens up the flavors and is key to the perfect fajitas.
Customize Your Toppings: Add sour cream, pico de gallo, or jalapeños for extra flavor.
FAQ
Can I use a different cut of beef?
Yes! Thinly sliced skirt steak or flank steak works well if shaved beef isn’t available.
What other vegetables can I use?
You can add mushrooms, zucchini, or poblano peppers to the mix for variety.
Can I make this dish dairy-free?
Absolutely! Simply omit the butter and Cotija cheese. Use avocado oil for cooking instead.
How do I store leftovers?
Store the cooked beef and veggies in an airtight container in the fridge for up to 3 days. Reheat in a skillet or microwave before serving.
What tortillas work best?
Both flour and corn tortillas are great options. Choose your favorite or use low-carb tortillas for a lighter meal.
