Moussaka Rice gives you everything you love about moussaka (spiced lamb, tender eggplant, cinnamon, tomato) with none of the layering, so perfect for weeknights! Lamb, roasted eggplant, and Yukon Gold potatoes cook with basmati in one pot of lemony beef broth, then get a cool garlic yogurt on top. Dinner for six, and only one pot and one sheet pan to wash.

I swapped the traditional béchamel for garlic yogurt because it keeps the whole dish lighter, and the tang cuts right through the rich lamb. (Greek grandmothers, please look away.)

Why You'll Love This Recipe
All the moussaka flavor, a fraction of the work. No layers, no béchamel.
One pot for the rice. The rice cooks right in the spiced broth, so every grain is seasoned.
Lighter than the original. Garlic yogurt stands in for the heavy béchamel.
Feeds six. Plenty for leftovers.

Ingredient Notes
Ground Lamb (or Beef): Lamb gives the dish its deep flavor. Beef is milder and works just as well. Brown it over medium-high heat so it picks up color before the garlic goes in.
Eggplant: Roast separately instead of cooking in the pot, so it keeps its shape and gets a little caramelized. It adds the soft, silky texture that makes this taste like moussaka.
Yukon Gold Potatoes: They soak up the broth and add body, and they stay creamy instead of falling apart. They are the “moussaka” part that makes this a full meal.
Parboiled Basmati Rice: Parboiled basmati stays fluffy and separate through a 25-minute simmer in the pot. Do not use jasmine rice. It turns mushy in this much liquid. I use the same rice in my Stuffed Cabbage Bowl. If you only have non-parboiled basmati, see the substitutions below.
Cinnamon, Allspice, and Oregano: These are what make it taste like moussaka. The cinnamon and allspice add warmth, the oregano brings the Greek note, and they all bloom in the tomato paste. My Mediterranean herbs and spices guide goes deeper if you want to explore.
Tomato Paste and Crushed Tomatoes: The tomato paste cooks down and deepens the flavor, and the crushed tomatoes add a bright sweetness. Cook the paste with the spices for a minute so it loses its raw edge.
Lemon Juice and Beef Broth: The broth gives the rice its savory flavor, and the lemon keeps the whole pot from tasting heavy. Stir the lemon juice into the broth before you pour it in.
Garlic Yogurt: Cool, tangy, and creamy on top of the warm spiced rice. It does the job of the béchamel with much less weight. Use full-fat Greek yogurt so it stays thick.
Pro tip
The Secret to Perfect Eggpalnt
Space the eggplant out on the parchment. Crowded cubes steam instead of roasting. They will develop a nice crisp that adds texture.
Substitutions & Variations
No parboiled basmati? Regular (non-parboiled) basmati works, but use 4 cups of beef broth instead of 4½ and start checking the rice early, since it cooks faster. Long grain white rice is another option. Don’t use jasmine rice. It gets mushy in this recipe.
No lamb? Ground beef works the same way, with a milder flavor.
Want it dairy-free? Skip the yogurt and top with a drizzle of tahini mixed with water and lemon juice.
