Let’s be honest, regular nachos are great but potato nachos hit different. The crispy roasted slices hold up under the toppings in a way that chips sometimes do not, and the cumin and smoked paprika on the potatoes tie directly into the spiced beef so the whole dish tastes cohesive. The tzatziki on top is cool, garlicky, and creamy against the warm spiced beef. This is the nacho situation your Friday night has been waiting for.

Why You'll Love This Recipe
The spiced ground beef. Cumin, paprika, tomato paste, and oregano cooked into a slightly saucy, glossy beef that sits on top of the potatoes like it was always meant to be there.
Tzatziki instead of sour cream. Cool, garlicky, herby, and the detail that makes this Greek rather than just a loaded potato situation. You can find it at any Middle Eastern or Mediterranean market, or at most grocery stores.
Two cheeses melted directly on top. Mozzarella for the stretch, cheddar for the sharpness. Both necessary. Neither optional.

Ingredient Notes
Russet Potatoes: The thinner the slice, the crispier the chip. A mandoline gets you to about an eighth of an inch, which is the sweet spot between crispy enough to hold toppings and sturdy enough not to shatter when you pick them up. Spread them across two sheet pans in a single layer with the parchment generously oiled so every slice has direct contact with the hot pan. If you love crispy roasted russets, my Patatas Bravas Bowl uses the same variety at the same high heat for the same crispy reason.
The Spice Blend on the Potatoes: Cumin, smoked paprika, onion powder, garlic powder, salt, and black pepper are tossed directly with the sliced potatoes and olive oil before they go on the pan. They tie directly into the spiced beef topping!
Ground Beef: Cooked in olive oil with tomato paste, cumin, paprika, oregano, onion powder, and salt, finished with a splash of water to create a slightly saucy, glossy beef topping rather than dry crumbles. The same technique as in my Patatas Bravas Bowl and my Lebanese Potato Bowl.
Mozzarella and Cheddar: Mozzarella gives you the stretch and the melt that makes nachos look like nachos. Cheddar adds a sharp savory bite that mozzarella alone cannot give you. Together they create a cheese layer that is satisfying in every way a nacho cheese situation should be.
Kalamata Olives: Kalamata olives are dark, briny, and intensely savory, and a topping that makes these specifically Mediterranean. The same olive I use in my One Pan Mediterranean Cod, where they do equally important work.
Tzatziki: Tzatziki is a Greek yogurt sauce made with cucumber, garlic, dill, and lemon that is cool, creamy, and garlicky in all the right ways. Pick it up at any Middle Eastern or Mediterranean grocery store or find it in the refrigerated dip section of most well-stocked supermarkets. If you cannot find it, a simple garlic yogurt sauce of Greek yogurt, grated garlic, lemon juice, salt, and pepper is a five minute substitute that works beautifully.
Pro tip
Serve Them Hot
Serve immediately. These are best eaten hot, straight from the pan while the cheese is still melted and the potatoes are still crispy. Call everyone to the table before the nachos come out of the oven 🙂
Substitutions & Variations
No mandoline? A sharp knife and patience gets you there. Aim for slices as thin and as even as possible. Uneven slices mean some chips are done while others are still soft and nothing is more disappointing than a soft nacho chip.
No ground beef? Ground lamb is a very Greek move and adds a deeper slightly gamier flavor that works beautifully with the tzatziki and olives. Ground chicken or turkey work for a lighter version. Add an extra tablespoon of olive oil to compensate for the lower fat content.
No tzatziki at your store? Mix three-quarters of a cup of full-fat Greek yogurt with one grated garlic clove, ½ cup finely grated cucumber (strained), a tablespoon of lemon juice, a tablespoon of chopped fresh dill, salt, and pepper. Stir and refrigerate while the potatoes roast. Done in five minutes and genuinely very good.
Want more heat? Add a teaspoon of Calabrian chili paste to the beef mixture or a drizzle of chili oil over the finished nachos. The heat works beautifully against the cool tzatziki.

FAQ
Either the slices were too thick, the pans were too crowded, or the oven was not fully preheated. Make sure the slices are thin and in a single layer with no overlapping, the parchment is generously oiled, and the oven is fully preheated to 425°F before the pans go in.
Yes! Skip the ground beef and replace it with a can of drained chickpeas tossed in the same spice blend and roasted at 400F for 20 minutes until crispy. Add them directly on top of the potatoes with the cheese and return to the oven for the same 5 minutes. The tzatziki and olives carry so much flavor that the nachos are completely satisfying without meat.

Instructions
Roast the potatoes
- Preheat your oven to 400F. Line two large sheet pans with parchment paper and drizzle one tablespoon of olive oil across each sheet pan. Spread the oil around so the entire surface of the parchment is coated.2 tbsp extra virgin olive oil for the parchment

- Slice the russet potatoes ¼ inch thick and as evenly as possible, ideally on a mandoline. If using a knife, aim for slices you can manage and try to keep them consistent so they cook evenly.3 large russet potatoes

- Add the sliced potatoes to a large bowl and toss with one tablespoon of olive oil, cumin, smoked paprika, onion powder, garlic powder, salt, and black pepper until every slice is evenly coated.1 tbsp extra virgin olive oil for tossing, 3 tsp ground cumin, 2 tsp smoked paprika, 3 tsp onion powder, 2 tsp garlic powder, 1.5 tsp salt, 1 tsp black pepper

- Spread the seasoned potatoes across the two prepared sheet pans in a single layer. Do not overlap. Every slice needs direct contact with the hot, oiled parchment to get crispy. Bake at 400 for 20-25 minutes, until the potatoes are golden, crispy at the edges, and cooked through.

Make the spiced beef
- While the potatoes roast, heat the olive oil in a large skillet over medium high heat. Add the ground beef and spread into an even layer. Cook undisturbed for 3 to 4 minutes until a golden sear develops on the bottom. Break into crumbles and cook until fully browned and any liquid has evaporated.1 lb ground beef, 1 tbsp extra virgin olive oil

- Turn the heat to medium and add the cumin, paprika, oregano, onion powder, and salt. Stir to coat evenly. Add the tomato paste and cook for 1 to 2 minutes, stirring constantly until it darkens. Add the garlic and cook for 30 seconds. Add the water and stir to combine. Simmer for 2 to 3 minutes until the beef is slightly saucy and glossy. Remove from heat and set aside.1 garlic clove , 1 tbsp tomato paste, 1 tsp ground cumin, 1 tsp dried oregano, 1 tsp smoked paprika, 1 tsp onion powder, ½ tsp salt, ⅓ cup water

Assemble and melt
- Remove the sheet pans from the oven and consolidate onto one pan for serving. Spoon the spiced beef evenly over the potatoes. Scatter the shredded mozzarella and cheddar generously over the beef.1 cup shredded mozzarella, 1.5 cups shredded cheddar

- Return to the oven for 5 minutes until the cheese is fully melted, bubbly, and starting to turn golden at the edges.

Top and serve
- Remove from the oven. Scatter the diced tomato and diced Kalamata olives over the top. Add pickled onions if using. Drizzle tzatziki generously over everything. Serve immediately straight from the pan while the cheese is still hot and the potatoes are still crispy.1 large beefsteak tomato, ½ cup Kalamata olives, ½ cup Tzatziki for drizzling, Pickled onions
