No marinating, no prep, no mess. If you want to use fresh chicken, thin cutlets pan-fried in olive oil with salt, garlic powder, and a pinch of cayenne work just as well.
Homemade or Frozen Falafel: If you have my Crispy Homemade Falafel in the freezer, reheat them in the air fryer, and they come out just as crispy as the day you made them! Trader Joe's frozen falafel is the best store-bought alternative and reheats beautifully in the air fryer in the same time. The falafel adds a herby, slightly crispy element inside the crunchwrap.
The Tahini Caesar Dressing: Greek yogurt replaces most of the mayo for a lighter, tangier, protein-rich base. Tahini adds a nutty sesame depth that is distinctly Middle Eastern and works beautifully with the classic Caesar flavors of anchovy paste, Worcestershire, and Dijon mustard. Freshly grated Parmigiano Reggiano melts into the dressing and adds the sharp salty note that makes a Caesar dressing taste like a Caesar dressing. Substitutions & Variations
No Just Bare chicken? Any pre-cooked frozen chicken strips work here. My Za'atar Chicken Cutlet, sliced thin inside this crunchwrap, is an incredible upgrade if you have them on hand.
No anchovy paste? A teaspoon of capers finely mashed works as a substitute and adds a similar briny umami depth. The flavor will be slightly different but still very good.
No tahini? Use all mayo in the same total quantity. The dressing will be a more standard Caesar without the Mediterranean twist but still delicious.
Want to make it vegetarian? Skip the chicken entirely and double the falafel to four per crunchwrap. The tahini Caesar dressing and crispy falafel together are completely satisfying without the chicken.

he seam was not sealed properly before flipping. Make sure the crunchwrap goes into the pan seam side down first and do not move it for the full 2 to 3 minutes. The heat seals the folds against the pan. Flipping too early before the seam has set is the most common reason crunchwraps fall apart.
The dressing and the chicken and falafel can all be prepared ahead. Assemble and toast the crunchwraps fresh right before serving. A pre-assembled crunchwrap that sits will get soggy from the dressing and the romaine will wilt.

Ingredients
Crunchwrap
- 1 package Just Bare chicken strips frozen or your favorite crispy chicken
- 8 falafel homemade (linked in post) or Trader Joe's frozen falafel
- 4 cups romaine lettuce chopped
- 4 large burrito sized flour tortillas
- 4 small 6 inch flour tortillas
- Extra virgin olive oil for toasting
Tahini Caesar dressing
- ¾ cup full fat Greek yogurt
- ½ cup Kewpie mayo
- 1 tablespoon tahini
- 2 tablespoon fresh lemon juice
- 1 garlic clove grated
- 1 teaspoon Worcestershire sauce
- ½ cup freshly grated Parmigiano Reggiano
- 1 teaspoon anchovy paste
- 1 teaspoon Dijon mustard
Instructions
Make the Caesar dressing
- Add the Greek yogurt, Kewpie mayo, tahini, lemon juice, grated garlic, Worcestershire sauce, freshly grated Parmigiano Reggiano, anchovy paste, and Dijon mustard to a medium bowl. Whisk until completely smooth and creamy with no visible lumps. Taste and adjust lemon, salt, and anchovy paste as needed. The dressing should be bold, tangy, and well seasoned on its own. Set aside to rest while you prepare everything else.¾ cup full fat Greek yogurt, ½ cup Kewpie mayo, 1 tbsp tahini, 2 tbsp fresh lemon juice, 1 garlic clove, 1 tsp Worcestershire sauce, ½ cup freshly grated Parmigiano Reggiano, 1 tsp anchovy paste, 1 tsp Dijon mustard

Air fry the chicken and falafel
- Place the Just Bare chicken strips in the air fryer basket in a single layer. Air fry at 375F for 16 minutes until crispy and heated through. Remove and set aside.1 package Just Bare chicken strips
- If using homemade frozen falafel, place in the air fryer at 375F for 6 minutes until crispy and warmed through. If using Trader Joe's frozen falafel follow the package instructions. Both come out perfectly crispy from the air fryer.8 falafel
Dress the romaine
- Add the chopped romaine to a bowl and drizzle with 3 tablespoons of the Caesar dressing. Toss until every leaf is lightly coated.4 cups romaine lettuce

Assemble the crunchwraps
- Lay one large burrito tortilla flat on a clean surface. Spoon a generous dollop of Caesar dressing in the center of the tortilla. Layer the chicken strips in the center followed by the dressed romaine and then 2 falafel. Place one small 6 inch tortilla directly on top of the filling stack.4 large burrito sized flour tortillas, 4 small 6 inch flour tortillas

- Fold the edges of the large tortilla up and over the small tortilla one section at a time, pleating as you go to create a sealed parcel. Press firmly with your hands to hold the folds in place. Repeat with the remaining 3 crunchwraps.

Toast the crunchwraps
- Heat a drizzle of olive oil in a large skillet over medium heat. Place the crunchwrap seam side down in the pan and press gently with a spatula so the entire surface makes contact. Cook for 2 to 3 minutes without moving until the underside is deeply golden and the seam is sealed. Flip carefully and cook for another 2 minutes until the second side is equally golden.Extra virgin olive oil for toasting

Serve
- Remove from the pan and slice in half with a sharp knife. Serve immediately while the outside is still crispy and the inside is warm. Serve the remaining Caesar dressing alongside for dipping.
