I love absolutely love Greek Lemon Potatoes but I wanted to give it a little of Lola's touch. I thought how could I add my own spin to this drawing influence from my own culture and travels? And lo and behold my Mediterranean inspired Lemon Za'atar potatoes were born!

  • 2.5 lbs yukon gold potatoes
  • ⅓ cup olive oil
  • ¼ cup fresh lemon juice
  • 1 tablespoon za’atar seasoning
  • ¼ teaspoon salt or salt to taste

Dill Whipped Feta:

  • 1 cup feta cheese
  • ½ cup labneh
  • 1 tablespoon heavy cream
  • 1.5 tablespoon chopped dill (more for garnish

  • ¼ teaspoon salt or salt to taste

Instructions

Potatoes

  • Preheat oven to 425F.
    Hand adjusting oven temperature dial to 160 degrees, focusing on precise cooking settings at home.
  • Wash and peel your potatoes. Cut into quarters and add to a pan with 1 tablespoon of lemon juice and ¼ teaspoon of salt and boil for 6 minutes.
