Ingredients
For the Roasted Potatoes
- 1 lb Yukon gold potatoes sliced
- 1 tablespoon extra virgin olive oil
- 1 teaspoon garlic powder
- 1 teaspoon oregano powder
- ½ teaspoon paprika
- ½ teaspoon salt
- ½ teaspoon black pepper
For the Ground Beef
- 1 lb lean ground beef
- 3 cloves garlic minced
- 1 teaspoon oregano
- 1 teaspoon onion powder
- 1 tablespoon tomato paste
- ⅓ cup water
- 1 tablespoon extra virgin olive oil
- ½ teaspoon paprika
- Salt and pepper to taste
For Topping
- ¾ cups Sliced cherry tomatoes
- ¾ cups Kalamata olives sliced
- ½ cup Crumbled feta
- 2 tablespoon Fresh parsley
- Yogurt sauce Linked in notes
Instructions
Roast the Potatoes
- Preheat oven to 425°F.
- Slice Yukon potatoes into even pieces.1 lb Yukon gold potatoes
- Toss with olive oil, garlic powder, oregano, paprika, salt, and pepper.1 tablespoon extra virgin olive oil, 1 teaspoon garlic powder, 1 teaspoon oregano powder, ½ teaspoon paprika, Salt and pepper to taste
- Spread in a single layer on a sheet pan with the skin side up.
- Roast for 25–30 minutes, flipping halfway, until golden and crisp.
Cook the Beef
- Heat olive oil in a skillet over medium heat.1 tablespoon extra virgin olive oil
- Add ground beef and cook, breaking it apart, until browned.1 lb lean ground beef
- Stir in garlic and cook 30 seconds until fragrant.3 cloves garlic
- Add oregano, onion powder, paprika, salt, and pepper.1 teaspoon onion powder, ½ teaspoon paprika, 1 teaspoon oregano
- Stir in tomato paste and cook 1 minute to deepen flavor.1 tablespoon tomato paste

- Spoon warm beef evenly over the top.
