Living in Los Angeles means being surrounded by amazing Mexican food, which has inspired so many regular rotation recipes I make at home. These dishes are so easy to make and pack so much flavor. I like to turn the heat up sometimes like with my Chipotle Chicken Sandwich, but heat is totally optional!
